Virginia's Baked Rice Recipe
Ingredients
1 1/2 c instant rice
2 t butter
1 1/2 c water
1 t salt
1 envelope French dressing mix
1 2-oz. can sliced mushrooms, plus liquid
1 tomato, sliced thin
1 t frozen chives
Directions
In a 1 1/2 -quart flameproof casserole, lightly brown rice in butter.
Add 1 1/2 C hot water, salt, dressing mix, and mushrooms and their liquid.
Cover casserole and bake 20 minutes at 350° F.
During last 10 minutes of baking top with thinly sliced tomato and sprinkle with chives.
