Virginia Peanut Soup Recipe
Ingredients
| Chicken broth | 2 Quart | |
| Onion | 1 Small, diced | |
| Butter | 1/4 Pound | |
| Peanut butter | 1 Pint | |
| Celery stalks | 2 , diced | |
| 3 tablespoons four | ||
| Celery salt | 1/3 Teaspoon | |
| Salt | 1 Teaspoon | |
| Lemon juice | 1 Tablespoon | |
| Ground peanuts | ||
Directions
Melt butter in cooking vessel and add onion and celery.
Saute for 5 minutes, but do not brown.
Add flour and mix well.
Add hot chicken broth and cook 1/2 hour.
Remove from stove, strain, and add peanut butter, celery salt, and lemon juice.
Just before serving, sprinkle with ground peanuts.
