Virginia Apple Candy Recipe
Ingredients
8 medium apples
1/2 cup cold water, divided
2 cups firmly packed light brown sugar
2 envelopes unflavored gelatin
1 cup chopped nuts
1 tablespoon fresh lemon juice
1/2 cup confectioners sugar
1 tablespoon cornstarch
Directions
Peel, core and chop apples.
Place apples in a saucepan and add 1/4 cup water.
Cook until tender; put through a food mill or a sieve.
Return to saucepan and add brown sugar.
Cook over low heat until thick, about 30 minutes, stirring often.
Soften unflavored gelatin in remaining 1/4 cup cold water.
Mix into hot apple mixture; stir until dissolved.
Chill mixture until thickened, then stir in chopped nuts and lemon juice.
Pour into an 8 or 9 inch square pan to a depth of about 1/2 inch.
Chill until firm.
Cut into squares.

Roll squares in mixture and place each square in a paper candy cup.
