Ingredients

 Wine vinegar1/4 Cup (16 tbs)
 Dry white wine or dry vermouth - 1/4 cup
 Shallots or green onions - 1 tablespoon, minced
 Fresh tarragon - 1 tablespoon, minced (or Dry tarragon - 1/2 tablespoon)
 Pepper white1/8 Teaspoon
 Salt - a pinch

Directions

MAKING
1) In a saucepan, add vinegar, vermouth, onions, tarragon, salt and pepper to combine.
2) Place over heat to bring a boil.
3) Reduce heat to medium and cook until the volume reduced to about 2 tablespoons.
4) Place aside to cool.

SERVING
5) Use to prepare Mock Bearnaise Sauce.
