Vinegar Essence For Bearnaise Sauce Recipe
Ingredients
| Wine vinegar | 1/4 Cup (16 tbs) | |
| Dry white wine or dry vermouth - 1/4 cup | ||
| Shallots or green onions - 1 tablespoon, minced | ||
| Fresh tarragon - 1 tablespoon, minced (or Dry tarragon - 1/2 tablespoon) | ||
| Pepper white | 1/8 Teaspoon | |
| Salt - a pinch | ||
Directions
MAKING
1) In a saucepan, add vinegar, vermouth, onions, tarragon, salt and pepper to combine.
2) Place over heat to bring a boil.
3) Reduce heat to medium and cook until the volume reduced to about 2 tablespoons.
4) Place aside to cool.
SERVING
5) Use to prepare Mock Bearnaise Sauce.
