Vinaigrette Sauce Recipe
Ingredients
| 2 hard-cooked eggs, finely chopped Juice of 1/2 lemon | ||
| Onion | 1 Teaspoon, grated | |
| Capers | 1 Tablespoon | |
| Red wine vinegar | 2 Tablespoon | |
| Dijon Mustard | 1 Teaspoon | |
| Tarragon | 1 Teaspoon, chopped | |
| 1 gherkin, finely chopped Salt and ground pepper to taste | ||
| Safflower oil | 1/2 Cup (16 tbs) | |
| 1 8-ounce container plain yogurt | ||
Directions
Combine eggs, lemon juice, onion, capers, wine vinegar, mustard, tarragon, gherkin, salt and pepper in a bowl; mix well.
Blend in safflower oil, a little at a time; add yogurt.
Chill.
