Ingredients

 2 hard-cooked eggs, finely chopped Juice of 1/2 lemon
 Onion1 Teaspoon, grated
 Capers1 Tablespoon
 Red wine vinegar2 Tablespoon
 Dijon Mustard1 Teaspoon
 Tarragon1 Teaspoon, chopped
 1 gherkin, finely chopped Salt and ground pepper to taste
 Safflower oil1/2 Cup (16 tbs)
 1 8-ounce container plain yogurt

Directions

Combine eggs, lemon juice, onion, capers, wine vinegar, mustard, tarragon, gherkin, salt and pepper in a bowl; mix well.
Blend in safflower oil, a little at a time; add yogurt.
Chill.
