Directions

About 15 minutes before serving: Wash spinach.
Cook in covered saucepan with water clinging to leaves about 6 minutes.
Drain well; chop.
In 1 tablespoon of the butter, saute onion until tender.
Add mustard, lemon juice, salt, pepper, eggs, remaining butter; heat.
Pour over spinach; toss.
