Ingredients

 
3 tbsp (45 ml) butter
 
3 cups (750 g) leek whites, finely sliced
 
1 cup (250 ml) potatoes, sliced
 
2 1/2 cups (675 ml) chicken stock
 
1 cup (250 ml) 15% cream
 
Salt and pepper
 
Chopped chives

Directions

–  In a stove-top casserole, melt butter and cook leek whites and potatoes without browning. Pour chicken stock into mixture and bring to a boil. Simmer until vegetables are tender.
–  Run mixture through blender and pour into soup tureen, Gently add cream. Season with salt and pepper. Refrigerate. Sprinkle with chopped chives before serving.
