Vichyssoise Soup Recipe

Ingredients
3 tablespoons butter or margarine
3 medium leeks, white part sliced
1 1/2 cups chicken broth
1/2 teaspoon salt
1/8 teaspoon pepper
2 medium potatoes, baked
1 1/2 cups milk
1 cup heavy cream
1 tablespoon sherry, optional
Chopped chives, optional
Directions
Combine butter and leeks in 2-quart casserole.
Cook at HIGH 3 to 4 minutes; stir in broth, salt and pepper.
Cook, covered, with lid, at HIGH 3 minutes and at MEDIUM 5 minutes.
Meanwhile, peel and dice, potatoes.
With electric mixer, blender or food processor, puree potatoes, broth mixture and milk.
Return to dish.
Cook, covered, at MEDIUM 3 to 4 minutes.
Stir in cream and sherry.
Chill thoroughly and garnish, if desired, with chopped chives
