Healthy Vichyssoise Recipe
Ingredients
| 7g low fat margarine | ||
| Leeks | 3 , sliced | |
| Onion | 1 , sliced | |
| Potatoes | 2 Large, chopped | |
| Chicken stock | 1 Liter, skimmed | |
| Skimmed milk | 125 Milliliter | |
| Snipped chives | 1 Tablespoon, garnish | |
Directions
Melt the margarine in a large saucepan over moderate heat.
Add the leeks, onion and potatoes and cook, stirring, for 3 minutes.
Add stock, bring to the boil, reduce heat, cover and simmer for 30 minutes.
Place stock mixture and milk in a food processor or blender and process until smooth.
Chill and serve garnished with chives.
