Ingredients

 
1 (16 oz.) can Italian plum tomatoes (imported) OR
 
2 lbs. fresh ripe plum tomatoes
 
1 stick butter (1/4 lb.)
 
1 medium onion peeled (whole)
 
Pinch salt
 
Pinch sugar (1/4 t.)

Directions

Chop tomatoes; combine tomatoes in juice with butter, whole onion, salt and sugar in a heavy sauce pan and bring to a slow boil.
Reduce to low heat and simmer for at least 1 hour, (maybe 1 1/2 hours).
Just before serving add a pat of butter to bring back the fresh taste of the cooked butter.
Serve over gnocchi or pasta shells.
