Very Good Eddie" Red Sauce Recipe
Ingredients
| Italian tomatoes | 1 Can (10oz) | |
| Ripe plum tomatoes | 2 Pound | |
| Butter stick | 1 | |
| Onion | 1 Medium, peeled | |
| Salt | 1 Pinch | |
| Pinch sugar (1/4 t.) | ||
Directions
Chop tomatoes; combine tomatoes in juice with butter, whole onion, salt and sugar in a heavy sauce pan and bring to a slow boil.
Reduce to low heat and simmer for at least 1 hour, (maybe 1 1/2 hours).
Just before serving add a pat of butter to bring back the fresh taste of the cooked butter.
Serve over gnocchi or pasta shells.
