Vermouth Scallops Recipe

Ingredients
1 lb (500 g) fresh scallops
5 tbsp (45 ml) butter
1 tbsp (15 ml) chopped Parsley
1/2 lb (250 g) mushrooms, quartered
1 tbsp (15 ml) lime juice
3 tbsp (45 ml) dry vermouth
3 tbsp (45 ml) flour
1/2 cup (125 ml) hot milk
1/4 tsp (1 ml) fennel seed
1 cup (250 ml) grated mozzarella cheese
Salt and pepper
Dash paprika
Few drops lemon juice
Directions
Place scallops, butter, parsley, mushrooms and lime juice in casserole.
Pour in vermouth, cover and microwave 3 minutes at MEDIUM-HIGH.
Mix in flour.
Continue microwaving 3 minutes, covered, at MEDIUM-HIGH.
Remove scallops and set aside.
Add hot milk, fennel, salt, pepper and paprika to casserole; mix well and sprinkle in lemon juice to taste.
Microwave 4 minutes at HIGH uncovered.
Replace scallops in casserole and mix well.
Spoon mixture into coquille dishes and top with cheese; microwave 1 minute at HIGH uncovered.
