Ingredients

 
6 lbs. ground venison
 
3/8 cup quick curing salt
 
1/4 tea spoon minced garlic
 
1 1/2 tablespoon mustard seed
 
2 tablespoon black pepper
 
1 1/2 tea spoon paprika
 
1 1/2 tea spoon sugar

Directions

Mix all the ingredients and chill overnight.
Next day add 1 1/2 tablespoon liquid smoke.
Mix well.
Make 2 logs.
Bake on cookie sheet for 1 hour at 300 degrees.
Keep watch, don't over bake.
