Venison In Rich Sauce Recipe

Ingredients
1 haunch of venison (young deer)
Vinegar
2 onions, sliced
4 carrots, sliced
4 parsley roots
1/4 celery root
5 laurel leaves
10 peppercorns
Salt
1/4 pound bacon
2 tablespoons flour
1/2 cup sour cream
Directions
Put water in a deep bowl, adding enough vinegar to flavor it.
Add onions, carrots, parsley roots, celery root, laurel leaves, peppercorns and salt.
Put the haunch of venison with bone already cut off into the bowl so it is completely covered by vinegar mixture.
Marinate for 3-7 days.
Then take venison out and cook it with all the roots and onions in a pressure cooker, with very little water added, for about 25 minutes.
Take meat out separately and press the cooked roots through a sieve.
Then fry the bacon until all the grease is in the pan and add the sauce to it.
In the meantime, add flour to the sour cream.
Mix well and add to the sauce while stirring.
Season to taste with either salt or a little sugar, and then add meat.
