1 oz. butter or margarine
 
Ground nutmeg or mace to taste
 
1 oz. cornflour
 
Salt and pepper
 
1 pt. veal stock

Directions

MAKING
1) In a pan, melt butter and add cornflour.
2) Saute till cornflour is well cooked.
3)Slowly pour in the stock and whisk the mixture till smooth.
4)Simmer for 5min and add seasonings.

SERVING
5)Use the veal stock as a base to make sauces or as a main sauce for roasts and grills.
