Veloute Of Asparagus Recipe

Ingredients
3 tbsp (45 ml) butter
3 tbsp (45 ml) flour
3 cups (750 ml) chicken stock
20 oz (568 ml) canned asparagus
Salt and pepper
1 tsp (5 ml) chopped chives 35% cream
A few asparagus tips
Directions
– In a skillet, melt butter and add flour. Cook for 2 minutes. Pour chicken stock over mixture and stir well. Add asparagus, season with salt, pepper, and chives. Simmer for 20 minutes. Run mixture through blender and pour into individual bowls. Add a thin strand of cream on top. Garnish with asparagus tips and serve.
