Ingredients

 Zucchini1 Medium, sliced
 1 medium yellow squash, sliced thin
 1/2 onion, sliced (not chopped)
 Yellow pepper1 To taste, sliced
 Green pepper1 , sliced
 4 or 5 mushrooms, sliced
 Garlic2 Teaspoon, minced
 Red pepper1/2 Teaspoon, crushed
 Tomato sauce

Directions

1. Saute all vegetables and minced garlic for about 5 minutes.
2. Towards the end of cooking time, add crushed red pepper.
3. Mix in tomato sauce to coat veggies generously.
4. Spoon mixture in roll, and put under broiler for 30 seconds (optional).
