Sunday Special Breakfast Muffins Recipe Video

This is an easy recipe. Perfect for making on a Sunday to have grab and go breakfast all the next week!

Ingredients

 
1 onion chopped
 
1 red pepper chopped
 
1 cup mozzarella cheese
 
4 cloves garlic
 
1 cup spinach
 
3 tbsp bacon bits
 
12 eggs ( whipped)
 
1 tbsp Olive oil

Directions

1. Add olive oil to the pan and melt over medium heat.
2. Add the chopped onions and tomatoes.
3. Add the garlic and saute for a while.
4. Add the spinach and cook on low heat for a couple of minutes.
5. Add cheese to whisked egg and add the bacon bits.
6. Add the veggies to the egg mixture and mix well.
7. Spray cooking spray on a muffin tray and pour the mixture in the cups.
8. Bake for 25-26 minutes.
