Vegetarian Mulligatawny Soup Recipe
Vegetarian Mulligatawny Soup has a brilliant taste. The essence Lemon juice gives the Vegetarian Mulligatawny Soup a bracing taste.
Ingredients
1/2 cup malka dal (masoor) (red lentils)
2 cups of coconut milk
2 cups water
1 chopped onion
1 small skinned and chopped carrot
1/2 cup skinned and chopped white pumpkin
1 small skinned and chopped turnip
A pinch of turmeric powder
1 tsp butter
1 tsp. ginger, garlic paste
1/2 tsp. roasted and powdered cummin seeds
1 tsp. garam masala powder
Juice of 1 lime
TO GARNISH
4-6 tsps. Boiled Rice
Directions
Microwave in a deep bowl dal, water, coconut milk, onion, carrot, pumpkin, turnip and turmeric powder at 70% power for 30 minutes.
Cool and liouidize.
Microwave butter for 30 seconds add ginger and garlic paste, cummin and garam masala powder and microwave for 3 minutes.
Mix in juice of lime.
Pour in individual bowls and garnish with boiled rice.
