Vegetarian Tostada & Avocado Dressing Recipe

I love trying oodles and oodles of things and that is exactly how I came upon this Vegetarian Tostada & Avocado Dressing recipe. I have bookmarked this particular Vegetarian Tostada & Avocado Dressing recipe so that I can try it again and again. Yummm!

Ingredients

 
4 8-inch tortillas
 
2 cups (480 ml) grated cheddar cheese
 
4 cups (960 ml) shredded lettuce
 
16-oz jar (480 ml) 3-bean salad, drained
 
2 cups (480 ml) alfalfa sprouts
 
14 1/2-oz can (435 g) Organic Diced Tomatoes, drained
 
1/4 cup (60 ml) green onion, chopped AVOCADO DRESSING:
 
3 large avocados, peeled, pitted and coarsely mashed
 
1 tbs (15 ml) lemon juice
 
1/2 cup (120 ml) nonfat plain yogurt or sour cream
 
2 cloves garlic, minced
 
1/3 cup (809 ml) green onion, chopped
 
1/4 tsp (1 ml) salt dash Tabasco
 
SALSA
 
2 14 1/2-oz cans (870 g) Organic Diced Tomatoes, undrained
 
3/4 cup (180 ml) red onion, chopped
 
1 green onion, chopped
 
1/2 jalapeno chile, seeded and minced
 
2 tbs (30 ml) fresh cilantro, chopped
 
2 cloves garlic, minced
 
4 tsp (20 ml) lime juice
 
1/4 tsp (1 ml) salt

Directions

Heat oven to 450°F (230°C).
Sprinkle tortillas lightly with water and bake 4-5 minutes, until crisp, turning once during baking.
In layers, top each tortilla with 1/3 cup Avocado Dressing, 1/4 cup cheese, 1 cup lettuce, 1/3 cup bean salad, 1/2 cup sprouts, 1/3 cup tomatoes, 1 tbs green onion and another 1/4 cup cheese.
Garnish with Salsa and Avocado Dressing.
Avocado Dressing: Combine in order given, stirring well after each addition.
Salsa: In large bowl, combine ingredients; blend well.
Cover and chill 3-4 hours before serving.
