Vegetarian Curry Recipe
Are you looking for a highly accoladed Vegetarian Curry recipe? This Vegetarian Curry is so tasty that I cannot resist serving it as a Side Dish often. Whenever I have Asian friends visiting, I always prepare Vegetarian Curry which is the most savored dish of their cuisine. Vegetable is one of the few ingredients I like to include in my daily cooking and this is my comfort recipe that I usually prepare using it. Serve this Vegetarian Curry at the table today and watch it disappear in delight!

Ingredients
Cooking oil 60ml
Onions, chopped 2
Garlic, crushed 1 clove
Chilli 2.5ml
Turmeric 2.5ml
Coriander ' 2.5ml
Cumin 2.5ml
Lentils 225g
White stock 900ml
Lemon juice 5ml
Salt and pepper to taste
Carrots, diced 2
Apple, peeled, cored and chopped 1
Sultanas 50g
Directions
Heat the oil in a pan.
Saute the onion and the garlic lightly.
Add the chilli, turmeric, coriander, cumin and lentils.
Cook gently for one minute.
Stir in the stock, lemon juice, salt and pepper.
Bring to the boil and continue to boil for 5 minutes.
Transfer to the Slo cooker and stir in the carrots, apple and sultanas.
Cook for the recommended time.
