Vegetarian Cajun Creole Recipe Video
Ingredients
Olive oil- 2 tablespoons
Onions – 2 cups, sliced
Garlic – 1 tsp, diced
Celery- 1 cup, sliced
Carrots – 1 cup, diced
Green pepper – 1 cup, diced
Mix of herbs(Trader Joes) – dried, as required
Tomatoes – 1, can
Kidney beans- 1 can
Frozen okra – 1 cup
Dijon mustard - 1 tablespoon
Agave nectar – 1 tsp
Hot cayenne pepper- 2 pinches
Directions
GETTING READY
1. Clean and wash all the vegetables and set aside till required
MAKING
2. In a large cooking pot, heat the oil and add the onions and sauté till soft
3. Add the garlic and cook till the garlic is done
4. Add the diced and sliced carrots, celery, green pepper and sauté till soft
5. Add more oil if required and mix in the herbs, cook for five minutes
6. When the vegetables have softened, pour in the tomatoes, the canned kidney beans, the okra and the Dijon mustard
7. Season to taste
8. Pour in the agave and add the cayenne pepper.
9. Simmer for 10 minutes

10. Serve hot with rice
