Vegetables In Brine Recipe
Ingredients
Brine
Whole green tomatoes
Celery stalks, in 2-3 inch pieces
Cauliflower
Green peppers
Carrot sticks per quart jar:
Vinegar
2-3 cloves garlic, halved
1 teaspoon mixed whole spices
1 sprig dill
Directions
To make brine, insert a raw egg, in shell, in water, and add enough salt to water so that egg will break surface of water in the visible diameter of a dime.
Wash all vegetables and place in quart jars.
Fill jars with brine, sealing tightly.
Shake and turn jars every other day for 10 days.
Remove brine.
Fill jars with vinegar.
To each jar add garlic, mixed whole spices, and fresh dill.
