Vegetable Walnut Loaf Recipe
Ingredients
Raw carrots - 1 cup, ground or grated
Raw celery - 1 cup, ground or grated
Onion - 3/4 cup, ground or grated
Parsley - 1/4 cup, chopped
Dry bread crumbs - 2 cups
Walnut meats - 1 cup, ground
Tomatoes - 2 cups, fresh or canned
Wheat germ – as needed, to thicken
Salad oil - 1 tablespoon
Salt - to taste
Pepper – to taste
Directions
GETTING READY
1. Preheat oven to 350 degrees Fahrenheit.
MAKING
2. In a large bowl, mix together all ingredients or in a blender, process all ingredients until well combined.
3. In a well greased loaf pan, pack the mixture tightly.
4. Bake uncovered in preheated oven for 1 ½ hour; occasionally brush with hot water, vegetarian consommé or tomato juice.
SERVING
5. Slice the bread and serve hot with tomato sauce.
6. When cold, Vegetable Walnut slices can be used for making sandwiches with eggless mayonnaise and veggies.
