Vegetable Tortilla Wraps Recipe
Ingredients
3 tablespoons shredded carrot
1/4 teaspoon dried basil leaves
3 tablespoons shredded zucchini
1/2 garlic clove, minced
1 tablespoon finely chopped scallion
3 tablespoons nonfat cream cheese
2 tablespoons finely chopped red bell pepper
5 tablespoons nonfat cottage cheese
4 nonfat flour or corn tortillas
1 tablespoon fresh chopped parsley
Directions
1. Combine carrot, zucchini, scallions, red pepper, parsley, basil, garlic, cream cheese, and cottage cheese.
2. Cover and chill for 1 1/2 hours.
3. Place a 3 quarter of the vegetable-cheese mixture in the center of each tortilla. Fold the two side flaps of each tortilla inward and roll up from the bottom.
