Vegetable Succotash Recipe
Ingredients
| 1/4 cup water, chicken broth, vegetable broth, or wine | ||
| Onion | 1 Medium, chopped | |
| 1 green bell pepper, seeded and diced | ||
| 2 medium potatoes, cooked, peeled, and diced | ||
| Lima beans | 2 Cup (16 tbs), frozen | |
| Corn kernels | 2 Cup (16 tbs), canned | |
| Chopped | 2 Cup (16 tbs), canned | |
| Paprika | 1 Teaspoon | |
| Black pepper | 1/4 Teaspoon | |
Directions
Heat water in a large, heavy pot over medium heat.
Add onion.
Cook and stir over medium heat for 5 minutes.
Add more liquid if necessary during this process.
Add green pepper.
Cook and stir for 5 more minutes, adding liquid if necessary.
Add the potatoes, lima beans, corn, tomatoes, paprika, and black pepper.
Simmer, covered, for 20 minutes.
Add onion.
Cook and stir over medium heat for 5 minutes.
Add more liquid if necessary during this process.
Add green pepper.
Cook and stir for 5 more minutes, adding liquid if necessary.
Add the potatoes, lima beans, corn, tomatoes, paprika, and black pepper.
Simmer, covered, for 20 minutes.
