Vegetable Soup (Vegetarian) Recipe
I am sure all your vegetarians and health consious out there are gonna love this Vegetable Soup. Zero calories and so full with the goodness of mixed vegetables, this Vegetable soup can even aid you in weight loss.
Ingredients
2 tbsp. fat or drippings
1 onion minced
1 cup-stewed or fresh tomatoes
1 cup chopped cabbage.
1 carrot sliced.
1/2 cup-shredded celery leaves
1/2 cup celery, diced
1/2 cup turnips diced
1 qt.water
2 tsp sugar
1 1/2 tsp. salt
1/4 tsp. pepper
1 cup raw potatoes, diced
1 cup fresh peas
1/2 cup corn
1qt. vegetable stock or water
Minced parsley
Directions
Melt drippings orfat and cook onion until tender but not brown add tomatoes, cabbage, Carrot, celery, celery leaves, turnips, 1 qt. water, and seasonings.
Cover, bring to a boil, and simmer for 1/4 hour.
Add potatoes, peas, and corn and continue cooking until tender.
Add additional stock or water, reheat, and serve garnished with minced parsley.
