Ingredients

 
3/4 cup chopped onion
 
3 tablespoons butter or margarine
 
1 1/2 cups zucchini, sliced or shredded
 
1 16 ounce can whole kernel corn, drained
 
1 16 ounce can stewed tomatoes
 
3 cups cooked rice
 
1 1/2 teaspoons salt
 
1/2 teaspoon pepper
 
1/2 teaspoon coriander
 
1/2 teaspoon oregano

Directions

In a large skillet or saucepan, saute chopped onion in butter or margarine.
Add zucchini, drained corn, stewed tomatoes, cooked rice, and seasonings.
Let simmer on low heat for 15 minutes.
