Ingredients

 2 tablespoons unrefined oil
 Onion1 , thinly sliced
 Garlic1 Clove (5gm), finley minced
 Green pepper1 , chopped
 Broccoli4 Cup (16 tbs)
 Eggs6 Small, beaten
 2 cups cubed or grated sharp cheese
 Sea salt1/2 Teaspoon
 1/2 teaspoon each of cumin and marjoram or crushed basil
 Sprinkle of curry powder

Directions

Heat a skillet on medium heat.
Add the oil and vegetables and saute lightly.
Cover and steam the vegetables in their own juices for 2 minutes.
Fold in the eggs, cheese, salt, and herbs.
Pour in an oiled 1 1/2 or 2 quart baking dish.
Bake 30 to 40 minutes at 325° or until set.
VARIATIONS : Fold in toasted bread cubes and bake.
Or line the oiled dish with lightly toasted whole wheat bread.
Pour the vegetables and cheese mix over the bread and bake.
