Ingredients

 
2 cups basmati rice ( washed and soaked in water for 20-30 min)
 
1 large onion thinly sliced
 
2 medium tomatoes chopped
 
1 cup mixed vegetables( capsicum, peas, carrots, beans , cauliflower etc)
 
1 tbsp ginger-garlic (freshly grated)
 
1 bay leaf
 
4 crushed cardamom pods
 
4-5 cloves
 
1 inch cinnamon stick
 
2 tbsp ghee or oil
 
4 cups hot boiled water
 
2-3 tsp kashmiri red chilli pwd
 
1/4 tsp turmeric pwd
 
1/2 tsp garam masala or kitchen king pwd ( optional)
 
salt to taste
 
chopped coriander leaves(cilantro) for garnishing

Directions

Firstly, drain the soaked and washed rice and keep aside.

Heat ghee in a large saucepan. once the ghee is hot add all the whole garam masalas(cloves + cardamom + bay leaf+ cinnamon) and saute for half a min. Add the ginger garlic and stir for some more time. drop in the onions and saute till they turn translucent. Then add the tomatoes and the red chilli pwd ,haldi pwd & garam masala pwd and cook till tomatoes are cooked.
Now add in all the vegggies and stir fry for a few more min.Then drop in the drained rice and stir fry for 2-3 min. Add 4 cups of water. turn the heat on med high. add enough salt. once the water starts boiling turn the heat to low , cover pan and let cook undisturbed for 25 - 30 min or until rice is cooked well and all the water is absorbed.

garnish with coriander leaves and serve with raitha.
