Vegetable Pulav Recipe
Ingredients
2 cups Basmati rice
2 carrots
1/2 cup chopped beans
1 cup fresh/frozen green peas
Handfull of coriander leaves
8 cashew nuts
6 green chillies
6-8 cloves
1" piece cinnamon
2-3 green cardamom
1-2 garlic
1 tsp coriander seeds
1 tbsp fresh or frozen coconut
1/2 cup clarified butter/ghee
Salt to taste
1 medium sized onion
4 cups of water
Directions
First wash the rice and soak in water for 1/2 an hour.
Dice and cook the vegetables.
Heat a tsp of ghee and fry cloves, green cardamon and cinnamon for a while. Now add coriander seeds and cashew and saute for a while. Now add the green chillies, chopped garlic, chopped gineger,coriander leaves and coconut. Fry for about one minute.
Now grind it to a paste using app. 1/2 cup of water. Now heat ghee in a vessel and fry the onions till golden brown.
Now add the cooked vegetable, ground paste and remaining water. Add salt to taste.
When it comes to a boil add the rice and lower the flame. Cook till all the water evaporates.
Serve hot with raita or any other curry.
