Vegetable Pate Recipe
This is a brilliant Vegetable Pate recipe!. This tasty dish is a favorite amongst my vegetarian friends. Try the Vegetable Pate and you will understand why!
Ingredients
100g (4oz) sunflower seeds
75g (3oz) wholewheat flour
15g (1/2oz) nutritional yeast flakes
2 tablespoons lemon juice
25g (1oz) butter or margarine
2 carrots
1 potato
1 stick of celery
Pinch of dried sage
1 1/2 teaspoons dried thyme
1 1/2 teaspoons dried basil or a bunch of fresh basil
1 teaspoon salt
250ml (8fl oz) warm water dash of pepper
Directions
Preheat the oven to 200°C/400°F/Gas mark 6.
Put all the ingredients into a food processor and blend for about 4 minutes, until smooth.
Alternatively, grate all the vegetables, grind the seeds in a blender and mix everything together in a bowl.
Spoon the vegetable mixture into an oiled 450g (1 lb) loaf tin and bake in the oven for 1 hour.
Leave to cool, then chill it in the refrigerator before serving.
The pate rises while cooking, but sinks as it cools.
Substitute almonds, walnuts, or a mixture, for the sunflower seeds.
