Vegetable Medley Recipe
|2 tablespoons butter, margarine, bacon fat, or chicken fat|
|1/4 cup coarsely chopped onion 2 or 3 cups vegetables, mixed Salt, pepper, and seasonings to taste|
Melt butter; add onion and saute 2 or 3 minutes. Prepare other vegetables appropriately, cutting or breaking into bite-size or smaller pieces. Add to onion-butter mixture and heat, stirring frequently. Add seasonings; reduce heat to very low and cook, covered, until tender. Add a small amount of water or broth if needed. Serve with any bit of cooking liquid, leaving lid off at last to reduce amount if necessary.
