2 tablespoons vegetable oil
 
3 medium carrots, scraped and cut into thin diagonal slices
 
2 stalks celery, cut into thin diagonal slices
 
1 green pepper, cut into 1-inch pieces
 
1 small onion, thinly sliced
 
1 tablespoon soy sauce
 
1 tablespoon catsup
 
1 tablespoon water

Directions

Heat oil in a large skillet, add vegetables, and saute 4 minutes.
Stir in remaining ingredients, cover, reduce heat to low, and cook 4 to 5 minutes or until vegetables are crisp-tender.
