Vegetable-Ham Soup Recipe
Ingredients
1 meaty hambone
1 sm. onion, sliced
1/2 c. chopped celery
Parsley to taste
1/2 tsp, salt
1/8 tsp. freshly ground pepper
4 carrots, diced
4 potatoes, cubed
1 can tomato sauce
1/2 c. noodles
1 c. frozen mixed vegetables
Directions
Cover hambone with 3 quarts water in large kettle; bring slowly to a boil.
Add onion, celery, parsley, salt and pepper; reduce heat.
Simmer, covered, for 1 hour.
Add carrots and potatoes; simmer, covered, for 15 minutes longer.
Remove hambone; cool.
Stir to- mato sauce into broth.
Cut meat from bone in bite- sized pieces; return to broth.
Add noodles and frozen vegetables; simmer for 30 minutes longer or until noodles and vegetables are tender.
