Vegetable Gumbo Recipe
Ingredients
3 cups sliced fresh okra
1 (16-ounce) can whole tomatoes, undrained
1 1/2 cups water
1 medium-size green pepper, seeded and chopped
1 cup fresh or frozen lima beans
1 cup fresh corn cut from cob
1/2 cup chopped onion
1 teaspoon vegetable-flavored bouillon granules
1 teaspoon chopped fresh parsley
1/4 teaspoon garlic powder
Directions
Combine all ingredients in a small Dutch oven; bring to a boil.
Cover; reduce heat, and simmer 45 minutes or until vegetables are tender, stirring occasionally.
