Vegetable Fried Rice Recipe

1 cup white rice
 
1 cup salad oil
 
1 tbsp. soya sauce
 
2 carrots
 
1/2 cup celery
 
1/2 cup french beans
 
1 onion
 
2 tbsps. bamboo shoots
 
1 cup peas
 
1/2 cup black mushrooms boiled and shredded
 
2 tbsps. spring onion, leaves chopped
 
1/4 tsp. pepper
 
2 tsps. salt
 
1 tsp. chilli oil

Directions

Clean the rice and boil with 1 teaspoon salt.
Do not let the rice split.
It should be firm but cooked.
When cooked put it in a strainer, drain well and add 1 teaspoon each salad oil and soya sauce and leave it on a flat surface to dry.
Cut carrots, celery, french beans, onion and bamboo shoots into thin strips about 1" long.
Heat 3 tablespoons oil and saute all the vegetables, peas and mushrooms.
Set aside.
Heat the remaining oil, add the rice and fry for 3 minutes.
Add sauted vegetables, mushrooms, soya sauce and spring onion leaves.
Add pepper and salt and fry for another 2 minutes.
Remove from fire and sprinkle chilli oil.
Serve hot with vegetable or chicken dish.
Note: If you want your Fried Rice hot and spicy, then add 1-2 tablespoons of Hot Garlic Sauce or Red Chilli Sauce.
