Ingredients
1.5 Tbs ghee (or oil)
1 chopped onion
1/4 tsp each cumin seed, coriander seed and yellow mustard seed
a few whole cloves
1 14 oz can diced tomatoes
1/2 head cauliflower broken into florets
3 Yukon gold potatoes peeled and chopped
1 cup chopped carrots
1 green pepper diced
1/4 cup broccoli florets
touch of cinnamon
1/2 cup veggie broth or water
1 Tbs yellow curry powder (hot)
Directions
heat the ghee, saute onion and add whole spiced. Add cauliflower and curry powder and stir fry until barely scorched, add tomatoes, carrots and potatoes. Cover and let cook for 30 mins adding broth or water as needed. Add green pepper and broccoli, sprinkle with a little cinnamon, cook 10 more mins.
