Ingredients

 
1 apple, coarsely chopped
 
1 cup cauliflower florets
 
2 carrots, sliced
 
1 cup broccoli florets
 
1 red bell pepper, seeded and chopped
 
1 onion, cut in chunks
 
1 cup frozen green peas
 
2 tomatoes, cut in wedges
 
1 tablespoon curry powder
 
1 tablespoon minced gingerroot
 
2 cloves garlic, minced
 
1/4 teaspoon cayenne pepper
 
1/2 cup vegetable broth or nonfat chicken broth
 
2 tablespoons lime juice

Directions

Bring 1 inch of water to a boil in a steamer.
Place apple, cauliflower, carrots, and broccoli in a steamer basket or colander and cover steamer.
Steam about 5 minutes.
Add red pepper, onion, peas, and tomatoes.
Steam for 3 more minutes.
Place curry powder, gingerroot, garlic, cayenne pepper, and broth in a saucepan.
Simmer for 5 minutes.
Stir in lime juice.
Pour sauce over vegetables and serve.
