Mixed Vegetable Curry Recipe

Ingredients
1 large potato
1 cup carrots
1 zucchini
3 tablespoons peanut oil
1 onion, minced
2 cloves garlic, minced
1 tablespoon flour
1 tablespoon lemon juice
1 tablespoon each curry powder and coriander
1 teaspoon ginger
2 teaspoons cumin
Hot red pepper to taste
1 tablespoon tomato paste
1 cup water
1 cup frozen peas
Directions
In a saucepan boil the potato and carrots in salted water until tender.
Peel and cut them into half-inch cubes.
Cook the zucchini until tender and cut it into half-inch cubes.
Set aside.
Heat the oil in a skillet and saute the onion until translucent.
Add the garlic, then stir in the flour.
Add the cooked vegetables, lemon juice and the spices.
In a bowl combine the tomato paste and water.
Pour into the vegetable mixture along with the peas.
Simmer for ten minutes.
Serve immediately.
