Ingredients

 
4 cups iceberg or romaine lettuce torn into bite-sized pieces
 
1 small bunch watercress, trimmed
 
1 small red onion, thinly sliced
 
3 tablespoons lemon juice Salt and pepper to taste
 
1 cup julienne carrots
 
1 cup julienne zucchini
 
1 cup julienne Cheddar cheese
 
1/2 cup chopped walnuts
 
1 cup chopped peanuts

Directions

Combine lettuce, watercress, onion and lemon juice in large bowl; toss lightly.
Add salt and pepper.
Combine carrots, zucchini and cheese; sprinkle over lettuce mixture.
Top with walnuts and peanuts.
