Ingredients

 1 potato, washed, unpeeled, cut in cubes
 1 carrot, washed, unpeeled, and coarsely chopped
 12 fresh green beans, chopped some mushroom stems if you have them
 Celery ribs2 , chopped
 3 small yellow squash, unpeeled and coarsely chopped
 1 onion, coarsely chopped handful of spinach, watercress, or parsley
 Garlic1 Clove (5gm)
 Tomato1 , chopped
 Sea salt or tamari soy sauce to taste

Directions

Cover vegetables with water and simmer until they are soft.
Strain; season with sea salt or tamari.
