Vegetable Broth Recipe
Ingredients
| 1 potato, washed, unpeeled, cut in cubes | ||
| 1 carrot, washed, unpeeled, and coarsely chopped | ||
| 12 fresh green beans, chopped some mushroom stems if you have them | ||
| Celery ribs | 2 , chopped | |
| 3 small yellow squash, unpeeled and coarsely chopped | ||
| 1 onion, coarsely chopped handful of spinach, watercress, or parsley | ||
| Garlic | 1 Clove (5gm) | |
| Tomato | 1 , chopped | |
| Sea salt or tamari soy sauce to taste | ||
Directions
Cover vegetables with water and simmer until they are soft.
Strain; season with sea salt or tamari.
