Vegetable Biryani Recipe

 1 cup basmati rice washed and soaked for 30 minutes and drained
 Oil1 Tablespoon
 1/2 tsp. roasted cummin seeds
 Onion1 , chopped
 GROUND TOGETHER INTO A PASTE
 6 red dry Goan or Kashmiri chillies
 Coriander seeds1 Teaspoon, roasted
 Cloves4
 4 shelled cardamoms
 Cinnamon1 Inch
 Peppercorns6
 Garlic8 Clove (5gm)
 Ginger1 Inch
 Poppy seeds1 Teaspoon, roasted
 Turmeric powder1 Teaspoon
 Vegetables1 Cup (16 tbs), cubed
 1/2 cup shelled greenpeas
 Salt1 Teaspoon
 Hot water21/2 Cup (16 tbs)
 1 tbsp. sliced almonds or cashewnuts
 Sultanas1 Tablespoon, fried (TO GARNISH)
 Fried onions1 Tablespoon, sliced (TO GARNISH)

Directions

Mix oil, cummin seeds and onion in a bowl and microwave covered for 2 minutes.
Mix in the ground ingredients cover the bowl and microwave further for 2 minutes.
Mix in the rice, cubed vegetables, greenpeas and salt.
Then pour in the hot water and microwave for 20 minutes.
Let it stand for 5 minutes, then fork to loosen up the grains of rice.
Spread out in a serving dish and garnish with almonds or cashewnuts, kismis and fried onions.
