Vegetable Tagine with Chickpeas and Raisins Recipe
Ingredients
| Olive oil | 2 Tablespoon | |
| Onions | 2 , chopped | |
| 1/2 tsp each ground cinnamon, coriander and cumin | ||
| Courgettes | 2 Large, cut in to chunks | |
| Tomatoes | 2 , chopped | |
| Can chickpeas | 400 Gram, drained, rinsed | |
| Raisins | 4 Tablespoon | |
| 425 ml/3/4 pt vegetable stock | ||
| 300 g/10 oz frozen peas | ||
| Chopped coriander, to serve | ||
Directions
1. Heat the oil in a pan, then fry the onions for 5 mins until soft. Stir in the spices. Add the courgettes, tomatoes, chickpeas, raisins and stock, then bring to the boil.
2. Cover, then simmer for 10 mins. Stir in the peas, then cook for 5 mins more. Sprinkle with coriander before serving.
