Vegetable Stuffing For Fish Recipe
Ingredients
| Scallions | 1/3 Cup (16 tbs), minced | |
| Celery | 1/2 Cup (16 tbs), minced | |
| 1 small sweet green pepper, cored, seeded, and minced | ||
| 1 medium-size carrot, peeled and cut in small dice | ||
| Mushrooms | 1/2 pound, minced | |
| Garlic | 1/2 Clove (5gm), crushed | |
| 2 tablespoons olive or other cooking oil | ||
| 2 tomatoes, peeled, seeded, and coarsely chopped | ||
| 1 pimiento, seeded and minced | ||
| Ripe olives | 1/4 Cup (16 tbs), minced | |
| Salt | 3/4 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
Directions
MAKING
1) Take a large, heavy skillet and place oil in it.
2) Sauté scallions, celery, green pepper, carrot, mushrooms, and garlic (if wished) in it over moderate flame for 5-8 minutes till pepper and carrot are crisp soft.
3) Remove from the heat and add the remaining ingredients.
SERVING
4) Use as a stuffing for fish.
