Vegetable Stuffing For Fish Recipe
|Minced scallions||1⁄3 Cup (5.33 tbs)|
|Minced celery||1⁄2 Cup (8 tbs)|
|Sweet green pepper||1 Small, cored, seeded and minced|
|Carrot||1 Medium, peeled and cut in small dice|
|Mushrooms||1⁄2 Pound, wiped clean and minced including stems|
|Garlic||1⁄2 Clove (2.5 gm), peeled and crushed|
|Olive oil/Other cooking oil||2 Tablespoon|
|Tomatoes||2 , peeled, seeded and coarsely chopped|
|Pimiento||1 , seeded and minced|
|Minced ripe olives||1⁄4 Cup (4 tbs)|

1) Take a large, heavy skillet and place oil in it.
2) Sauté scallions, celery, green pepper, carrot, mushrooms, and garlic (if wished) in it over moderate flame for 5-8 minutes till pepper and carrot are crisp soft.
3) Remove from the heat and add the remaining ingredients.
4) Use as a stuffing for fish.
