Healthy Vegetable Stir Fry Recipe

 Olive oil flavored vegetable cooking spray1
 Onion1 Medium, cut into thin wedges
 Julienned carrots1 1⁄2 Cup (24 tbs)
 Sugar snap peas1 1⁄2 Cup (24 tbs), trimmed
 Sweet red pepper1 Cup (16 tbs), chopped
 Canned low sodium chicken broth1⁄2 Cup (8 tbs) (Undiluted)
 Low sodium soy sauce2 Tablespoon
 Cornstarch2 Teaspoon
 Sugar1 Teaspoon
 Ground ginger1⁄4 Teaspoon
 Ground red pepper1⁄8 Teaspoon


Coat a wok or large nonstick skillet with cooking spray.
Heat at medium-high (375°) until hot.
Add onion; stir-fry 3 minutes.
Add carrot; stir-fry 2 minutes.
Add peas and sweet red pepper; stir-fry 4 to 5 minutes or until vegetables are crisp-tender.
Combine chicken broth and remaining ingredients, stirring with a wire whisk until smooth; add to vegetable mixture.
Cook, stirring constantly, until mixture is thickened.
