Vegetable Stir Fry Recipe

Ingredients
1 tablespoon vegetable oil
1 slice fresh ginger (1/8 inch), peeled
1 small clove garlic, peeled and crushed
1/4 cup sliced onion
1/2 cup fresh broccoli flowerets
1/2 cup cauliflower slices
1/2 cup red or green pepper strips
1/2 cup sliced fresh mushrooms
1 package (6 ounces) frozen pea pods
1/4 teaspoon salt
Directions
1. Put oil, ginger and garlic into a 1 1/2-quart glass casserole. Cook uncovered in microwave oven 1 minute at High.
2. Add onion, broccoli, cauliflower, pepper, mushrooms, pea pods and salt to casserole; stir. Cover with an all-glass lid or plastic wrap. Cook in microwave oven 4 to 5 minutes at High, or until vegetables are crisp. Set aside.
