Vegetable Soup Recipe

Ingredients
4 lbs. beef soup bone and meat
2 medium onions, sliced thin
Salt
Pepper ,
2 1/2 quarts cold water
1 cup onion, finely chopped
1 cup celery, finely chopped
2 tablespoons parsley, finely chopped
2 1/2 cups canned tomatoes
2 cups mixed vegetables, finely chopped (carrots, potatoes, cabbage and rutabaga)
Directions
Brown soup meat and bone in Dutch Oven Roaster using beef suet on meat.
Add onions, salt, pepper and water.
Cover and simmer 2 1/2 to 3 hours until meat is tender.
Strain.
Add remaining vegetables to beef broth and simmer slowly about 1 hour until vegetables are tender.
Cut cooked meat from bones into small pieces and add to soup.
