Vegetable Sandwich Loaf Recipe

Ingredients
6 oz (170 g) pepper cream cheese
3 tbsp (45 ml) sour cream
1 tsp (5 ml) chopped parsley
1/4 tsp (1 ml) paprika
1 loaf white bread, unsliced
1/2 English cucumber, thinly sliced
6 radishes, thinly sliced
1 small bunch asparagus, cooked
Salt and pepper
Directions
Mix cheese, sour cream, parsley, paprika, salt and pepper together in food processor until smooth.
Using long bread knife, slice off top and bottom crusts of loaf.
Continue cutting loaf to obtain 4 slices.
Spread first slice of bread with cheese mixture.
Set on large sheet of aluminum foil and layer with cucumbers; season well.
Butter second slice of bread with cheese mixture on both sides and set over cucumbers.
Layer radishes on bread and season well.
Butter third slice of bread with cheese mixture on both sides; place on sandwich.
Arrange asparagus on bread, trimming to size; season well.
Butter last slice of bread with cheese mixture on one side only.
Place, face down, over asparagus and cover sandwich loaf in foil.
Use another sheet if needed.
