Ingredients

 Cucumber1 Large, pared
 1 tablespoon each diced drained canned pimiento and coarsely grated carrot
 Green onion2 Teaspoon, chopped
 1 tablespoon plus 1 teaspoon white wine vinegar
 Olive oil1 Teaspoon
 Salt1/4 Teaspoon
 1/8 teaspoon each powdered mustard and pepper
 Dash granulated sugar substitute

Directions

Coarsely grate cucumber into a small bowl and pour off any liquid; add pimiento, carrot, and scallion.
In another small bowl combine remaining ingredients except pepper; pour over cucumber mixture and toss well.
