MAKING
To prepare the tortilla filling:
1. Take a bowl, add frozen corn, black beans, Serrano peppers, jalapeno, poblano peppers, onions, red bell pepper, tomatoes and green onion. Mix well.
2. Add the picante sauce, ground black pepper and the taco Mexican seasoning mix. Using a spoon combine the ingredients well.
3. Take a foil lined baking tray and spread two tortillas on it and spray butter using a butter spray on both sides of the tortillas.
4. Spread some gocomali on one of the tortillas and top it with some shredded cheese and spread the prepared mixture of vegetables on top of tortilla and then sprinkle some more cheese and close it with the other tortilla.
5. Bake in a toasting oven at 350 F for about 10 to 15 minutes, checking every 7 to 8 minutes for the color turning golden brown. Flip sides when one side is done.

SERVING
6. Serve the vegetable Quesadilla warm.

NOTE
The vegetable and pepper ingredients for the tortilla filling can be sauteed and mixed as well.
